6 tablespoons lemon juice or lime juice, fresh

In a cocktail shaker, crush the mint to release the oil.
Add the rum, sugar and lemon juice and shake thoroughly.
Mix with the water, strain and mix in jello till well dissolved, pour in 2 oz shot glasses 3/4 the way up and refrigerate till set.

2 ounces pineapple juice
1 ounce orange juice

Fill a cocktail shaker half way with ice cubes. Add the remaining ingredients, except the cherries and shake until cold and frothy, about 30 to 45 seconds.
Strain into 2 tall glasses with cracked ice and garnish each with 2 maraschino cherries and paper umbrellas.
Serve immediately.

In 4-quart Dutch oven, cook raspberries over medium heat 10 minutes, stirring frequently; cool slightly.
Push through strainer with large spoon to remove seeds.
Refrigerate raspberry juice at least 2 hours.
In punch bowl or large pitcher, mix raspberry juice and lemonade concentrate.
Stir in ginger ale.
Serve immediately over ice.
*Optional - add a shot of vodka to make into a grown up summertime cocktail*

Buy a bag of fresh juice oranges from a street vendor.
Squeeze 3 or 4 oranges. Pour into an ice tray. Let Freeze.
Squeeze another 3 or 4 oranges, right before you plan to serve your cocktail.
Place orange ice cubes in chilled glass.
Add fresh squeezed orange juice and good vodka.
Stir.
Drink.

3 tablespoons finely grated orange peel
5 cups cold water
4 cups sugar
2 1/2 cups bourbon

1. Combine mint, lemon juice, orange juice, and orange peel in a large heatproof bowl.
2. Bring 5 cups water and sugar to boil in large saucepan over high heat, stirring until sugar dissolves. Boil until syrup is reduced to 5 cups, about 10 minutes.
3. Pour hot syrup over mint and juices. Let stand 15 minutes. Chill uncovered until cold, then cover and chill 1 day.
4. Strain syrup into large pitcher, pressing on solids in strainer to release all syrup. Add bourbon, then 2 cups crushed ice and stir until ice dissolves.
5. Pour bourbon mixture over crushed ice in galsses, garnish with mint sprigs.
My mother always says, everything you need you already have. The same holds true for Punch. What? you may be asking. Yes, punch.
Go into your kitchen and open your fridge. Actually, visualize your fridge (so you don't have to sign off of BakeSpace). What do you have in the fridge?
I have cranberry juice, pineapple juice, 7up and rasberry vodka. Perfect.
FYI - No measureing cup needed... go by color.
It's good to place juices in fridge to get cold so they will act as a chiller.
1) Pour Cranberry in glass, pitcher or bowl about a third of the way up.
2) Continue with 1/3rd of pinapple juice.
3) Just before serving (you want to keep the bubbles) pour in 1/3 7up or sprite or any carbinated soda that's lemon-lime flavored.
4) Depending on what size glass, pitcher, bowl you have, pour enough vodka to give you a little buzz. FOr a punch bowl a half a bottle is good. This is when the fun starts... you can taste it to make sure it's ok.
Now the drink is very sweet and very tasty so don't be fooled if you cannot taste the vodka. It's in there and you'll be feeling it after the second drink.
I have a regular poker game with some girlfriends and every time I make this recipe they all say they get buzzed from it.
I like to top off the punch with frozen berries (will act as ice cubes) and slices of oranges. Next time I make it, I'll make sure I take a photo and updae the recipe. Everyone loves this punch!!!
The punch is cheap, easy to serve and makes a lasting impression. Plus, it's very good!
3 cups hot strong coffee
2 cups sugar
2 pt. whipping cream or half and half
1 qt. milk
1 tsp. vanilla
Dissolve sugar in hot coffee. Add other ingredients and stir until mixed. Pour into containers and freeze. When serving, thaw and serve slushy. I somtimes put in individual styrofoam cups. It makes it easier to serve.
Years ago, while spending many hours studying for my final exams, a good friend of mine made this recipe for me as she knew I loved coffee. It was such a thoughtful thing she did for me...and it's something I've passed on to others when they need a little "pick me up".
I like this smoothie recipe because of all the protein the tofu adds.
1 1/2 cups frozen blackberries (or use other berries if the seeds bother you)
1 cup mango cubes
1 cup low-fat tofu (I use silken)
1 cup orange juice
3 tablespoons honey (just eyeball it b/c honey is so annoying to clean from measuring spoons)
Combine all ingredients in a blender; process until smooth.
I used to work in a liquor store and bar while in college. One night my friends and I didn't know what to make and I got talked into buying pineapple liquor and didn't know what to make with it. I then made "A Marci Drink." Hope you like it :)
Tall collins glass, filled with ice

1 oz pineapple liquor, Dekuyper's works just fine
splash of pineapple juice for color
2-3 oz of coconut rum, I use Bacardi coco, its 35% ABV and it not as sweet as Malibu.
Sprite
Put all of ingredients into shaker except for the Sprite. Shake well, strain into collins glass and top with Sprite. Makes one drink. Throw in a paper umbrella to feel like you're at an island getaway :)

1 Pint Vanilla Ice Cream, approx.

Blend all ingredients thoroughly, adjusting ingredient amounts to suit your thickness/thinness preferences and tastes.

Smith and Wesson Cocktail
1.5 parts Coffee liqueur
1 part Vodka
1.5 parts Cream
1 part Cola (I used diet and it tasted awesome)
Fill a tall glass with Ice and then pour in Coffee Liqueur, Cream, Cola and Vodka.
Stir to combine and enjoy!

Moscow Mule
2 ounces vodka
1 ounce lime juice
4 ounces ginger beer (ginger ale if you want a non-alcoholic version)
Use vodka that has been stored in a freezer. The ginger beer and fruit should have been stored in a refrigerator. Stir vodka and juice together well in a copper mug or a chilled Collins glass. Add fresh cracked ice and a swizzle stick; top with ginger beer. Garnish with a lime wedge.
Variation: Ginger ale may be substituted for ginger beer.
"If the coffee flavor is too strong for your tastes, just add more root beer. It surprisingly does taste like a Tootsie Pop!"
Tootsie Pop
1 part Coffee liqueur
1 part Root beer
Prepare a tall glass full of ice then add the coffee liqueur, next add the root beer. Add a tootsie pop to garnish.

Apricot Coolers
1 (46 oz) can apricot nectar, chilled (I bought single cans, about 11 oz. each)
1 (12 oz) can frozen lemonade concentrate, thawed
1 (32 oz) bottle lemon-lime flavored soda, chilled
Cherry ice cubes (if desired)*
In a large nonmetal pitcher or punch bowl, combine apricot nectar and lemonade concentrate; mix well. Just before serving, add carbonated beverage. Serve over ice cubes. Makes 22 (8 oz) servings.
I made a much smaller batch (1/4 of original recipe) and kept the apricot/lemonade mixture in a tupperware until ready for use. I then filled a glass with ice, added apricot/lemonade mixture to fill 1/3 of glass, then topped it off with 2/3 part of soda.
*To make cherry ice cubes, place a maraschino cherry in each section of ice cube tray. Fill halfway with water; freeze until firm. Fill try with water and freeze completely.

Secret Banana Smoothies
Makes 1 large serving, shown
In a blender, add 1 cup milk, 1 cup ice cubes, 1 banana, 1 tsp. almond extract and 1 tsp sugar (optional). Blend until smooth.

Johnny Apple-cider-Seed Mocktail
1 scoop vanilla ice cream
Splash of OJ
7 Up or similar soda (to thin drink to your consistency liking)
Apple Cider
Mix ingredients in a blender or malt mixer (what I used, I'm not even sure what they are called). Adjust according to your tastes. I added more than just a splash of OJ, and thinned the mixture out with apple cider and soda until it was satisfactory. YUM!

1 1/2 oz. Amaretto
6 oz. OJ
club soda (if desired)
Fill a highball glass with ice. Add amaretto and OJ. Stir. Splash club soda on top (optional).

Toasted Almond Cocktail
1 part Amaretto
1 part Coffee liqueur
2 parts Cream
Traditionally bartenders just add the ingredients one after the other over ice. I prefer to add all three ingredients to a shaker, shake very well and then pour over ice.

Homemade Eggnog
Makes 2 large or 4 small servings.
2 eggs, room temperature
4 T. sugar
1/2 tsp. vanilla extract (my alteration)
1/4 tsp. nutmeg, plus more for garnishing
2 c. low fat milk
2 oz. brandy (optional)
In a large bowl, whisk together eggs and sugar until light in color and sugar is dissolved. Whisk in vanilla, nutmeg, milk and brandy, if using. Strain into a small pitcher and chill.
Pour into glasses and sprinkle with additional nutmeg.
I made this for a bridal shower and it was a huge hit!!
Ingredients:
1 can frozen Orange Juice (thawed)
1 Large can fruit punch
2 Liter of 7-up (may not need all)
3/4 container of orange or pineapple sherbet
Directions:
Pour OJ, fruit punch, and 7-up into punch bowl (taste to make sure it is enough 7-up) And spoon in desired amount of Sherbet.

3/4 cup brown sugar
1/2 - 3/4cup red hots
2-3 cinnamon sticks
4 slices lemon
Heat and serve.
